Chilli Garlic Prawns

Ingredients:

  • 2 tablespoons olive oil

  • 5 cloves garlic, finely chopped

  • 12 raw prawns, peeled and deveined

  • ½ tablespoon smoked paprika

  • ¼ teaspoon salt

  • ¼ teaspoon freshly ground black pepper

  • A good handful (≈20 g) fresh parsley, chopped

  • Juice of ¼ lime

  • 1–2 tablespoons Sri Lankan style chilli paste (adjust to your heat preference)

Step‑by‑Step Instructions:

  1. Prepare the aromatics.
    Finely chop the garlic, chilli and parsley.

  2. Heat the oil and sauté.
    Warm the olive oil in a frying pan over medium heat. Add the garlic and stir carefully so it doesn’t burn.

  3. Cook the prawns.
    Add the prawns and smoked paprika. Toss to coat and season with salt and pepper. Cook until the prawns turn pink and are just cooked through (6–8 minutes, depending on size).

  4. Add the chilli paste.
    Mix in the Sri Lankan style chilli paste so the prawns are evenly coated.

  5. Finish with parsley and lime.
    Sprinkle over the chopped parsley and squeeze the lime juice on top. Give everything a final toss.

  6. Serve immediately.
    Serve hot with crusty bread, pita, or as a vibrant starter or main.

Notes & Tips:

  • Cooking prawns just until pink keeps them tender and juicy.

  • Serve with extra parsley or a wedge of lemon for added freshness.
